50g grated cheese
Seasoning
Method
Heat a pan with oil
Add pepper, onion, courgette and garlic
Cook until tender
Add fresh tomatoes
Cook until tomatoes are tender
Add tomato puree and canned tomatoes
Once bubbling add coriander, 25g cheese and seasoning
Mix together
Pour into a serving dish and sprinkle the rest of the cheese on top
Serve with a jacket potato
