My older two children are often busy with clubs and sport activities after school and I sometimes find it a struggle to have the time to feed them healthy nutritious meals when they return home. It can be 9pm by the time they are ready to eat, so I resort to a fish and chip takeaway or a quick microwave meal. This gives me terrible mum guilt which is why I now have a slow cooker! Its just so easy to prepare hot, healthy meals for all the family and I don’t have to worry about them not getting their 5 a day. Why not give it a go? To get started here is the easiest of the slow cooked meals I make.
Chicken Casserole.
Serves 2.
Ingredients
2 x breasts of chicken, chopped into chunks
A selection of vegetables* (see below)
1 x onion, sliced thinly
10 x new potatoes
2 x Chicken Casserole packet mix
700ml boiling water
Method
Chop the chicken into chunks.
Slice the onion.
Chop the vegetables.
Add all the ingredients to the slow cooker.
Sprinkle the packet mix over the ingredients and mix well.
Pour over the boiling water and mix carefully.
Set slow cooker on low for 8 hours or high for 4 hours.
*I use 2 carrots, 2 parsnips, 6 mini corn, 4 tenderstem broccoli & a handful of French green beans. Alternatively, you could buy 1 bag of prepared casserole vegetables. This makes this recipe super quick to prepare!
