This is a great recipe that is quick and easy to make and will encourage your little ones to eat vegetables. I have included 3 versions. For a veggie option just omit the chicken or pork.
Ingredients
Version 1.
2 breasts of chicken, chopped
1 tin of tomatoes
1 pepper, chopped
4 mushrooms, chopped
1 onion, chopped
50g grated cheese
Wholemeal wraps
Version 2.
2 breasts of chicken, chopped
2 spring onions, chopped
1 courgette, chopped
1 carrot, grated
200g Quark
A pinch of mixed herbs
Squeeze of lime
50g grated cheese
Wholemeal wraps
Version 3.
300g pulled pork
1 apple, grated
200g Quark
1 tablespoon apple sauce
1 leek, chopped
A pinch of mixed herbs
50g grated cheese
Wholemeal wraps
Method
Pre heat the oven to 180C
Heat a little oil in a pan
Add the onions and cook until softened
Add the chicken or pork and cook for 3 minutes
Add all other ingredients apart from the cheese (and wraps!)
Simmer for 10 minutes
Place a little of the mixture onto a wrap
Roll the wrap up & place in an ovenproof dish
Repeat with the rest of the wraps and mixture
Sprinkle the cheese over the wraps
Place in the oven for 10 minutes
Serve with a salad
